ANCHIOVIES 
CARPACCIO 
Ingredients:  
  
Procedure:  
 clean the 
anchovies also removing their heads and bones, carefully wash and dry them with 
kitchen paper. Place them open into a soup plate by arranging them in not more 
than 5 layers and distributing some garlic, parsley cut into very small pieces, 
the pepper grains, vinegar (a very important warning: vinegar must completely 
cover everything), the needed quantity of salt between one layer and the next 
one. According to the anchovies size keep in the refrigerator from 6 to 12 
hours.  Drain, try to absorb all of the liquid by padding them with some 
kitchen paper. Dispose them on a dish where you had already creatively arranged 
some fresh salad in small pieces and season with olive oil. (It could be served 
as an appetizer as well).
